Now, you may probably ask me why Capsicum? Well, the reasons are actually many. These easily available veggies are rich in terms of Vitamin C. Plus, they come with a myriad of health benefits.

Needless to mention, it’s a pretty healthy vegetable that is low in calories. So, if you are quite health conscious and you are looking for a perfect appetite (that satisfies your taste buds without compromising your health), then you should definitely try this recipe at least for once.

This dish is so flavorful, so tasty, and so healthy. Additionally, it’s a completely vegan recipe and it doesn’t contain any animal products.

Here to mention, the original recipe of this dish was shared by my grandmother. However, her recipe was a bit spicy. Considering that, you are going to prepare a medium-spicy Capsicum Gravy that can be suitable for anyone (irrespective of any food habit), I have tweaked her recipe to some extent. My newly-invented Capsicum Gravy is less spicy but more tasty for sure!

Obviously, the main hero of this dish is my favorite seasonal vegetable – the “Green Bell Pepper” (Green Capsicum). To elevate the overall taste of this dish, I have also used two other veggies – tomatoes & onions. And, for the spices, I have used Coriander Powder and Red chili powder.

I. 1 cup of Green Bell Pepper (Green Capsicum) – cubed.
II. 1 onion – finely chopped.
III. 2 tomatoes – finely chopped.
IV. Cashew Nuts (around 10 to 15 pieces).
V. Sesame Seeds – around 1 teaspoon.
VI. Raw Peanuts – around 1 tablespoon.
VII. Red Chili Powder – around 1 teaspoon.
VIII. Coriander Powder – around 1 teaspoon.
IX. Vegetable Oil for cooking (as required).
X. Ginger (perfectly grated) – around 1 teaspoon.
XI. Cumin Seeds – around 1/2 teaspoon.
XII. 2 Cloves.
XIII. Salt to taste.

Directions for Preparing Capsicum Gravy

Step 1 – To begin with the recipe, all you will need to roast the cashew nuts, peanuts, and sesame seeds. Once roasted perfectly, set them aside.

Step 2Bring out a frying pan & add some vegetable oil. Now, add the following ingredients, such as cloves, black cardamom, & chopped onion. You will need to saute them until they become light golden.

Step 3 – Now, it’s the time to add grated ginger & tomatoes and saute them until they turn mushy.

Step 4 – Add salt, coriander powder, and red chili powder into the frying pan.
Step 5 – Saute them until the mixture gets well-cooked or begin to leave the sides.

Step 6 – Now, let it aside & leave it to rest. Next, you should grind the roasted peanuts, cashews, & sesame seeds and mix them with the onion tomato mixture. You can add a little water to make a smooth paste.

Step 7 – Take another skillet & add vegetable oil into it. Put it in a medium high temperature & add the cumin seeds.

Step 8 – Once, the cumin seeds begin to sizzle, add the capsicum & saute them until wilt off.
Step 9 – Now, pour the entire mixture into the skillet , add some spice powders as per your taste, add a little water ( as needed) and allow it to simmer until the gravy obtains the desired consistency and the capsicum gets cooked.

Step 10 – Make sure, you do not overcook the capsic*ms, or else it will become soggy. Now, switch off the flame & serve it to your guests.
